Here is a simple recipe for making chilli chicken at home:

Ingredients for chilli chicken:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, seeded and finely chopped
  • 1 red bell pepper, seeded and finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground fennel seed
  • 1/4 teaspoon ground mustard seed
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground red pepper flakes
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon ground paprika
  • 1/4 teaspoon ground chipotle pepper
  • 1/4 teaspoon ground ancho pepper
  • 1/4 teaspoon ground guajillo pepper
  • 1/4 teaspoon ground pasilla pepper
  • 1/4 teaspoon ground habanero pepper

Instructions chilli chicken:

  1. Heat the oil in a large skillet over medium heat. Add the chicken and cook until it is no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the onion, garlic, and bell peppers and cook until the vegetables are soft, about 5-7 minutes.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sugar, cornstarch, salt, black pepper, cumin, chili powder, ginger, paprika, cinnamon, coriander, turmeric, cardamom, cloves, nutmeg, allspice, fennel seed, mustard seed, white pepper, black pepper, red pepper flakes, cayenne pepper, paprika, chipotle pepper, ancho pepper, guajillo pepper, pasilla pepper, and habanero pepper. Pour the mixture over the vegetables in the skillet and stir to combine.
  4. Add the reserved chicken to the skillet and stir to coat with the sauce. Cook for an additional 5-7 minutes, or until the chicken is heated through and the sauce has thickened.
  5. Serve the chilli chicken over rice or with your choice of side dishes. Enjoy!
